PUDINA (Mint) PULAO

Mint pulao is an easy to make instant rice dish.This is very simple and flavourful recipe specially for lunch box.

Make a smooth paste of pudina leaves, coriander leaves, green chillies, ginger, coconut

Keep ready Bay leaf, cloves, cardamom, cinnamon

Heat ghee…Fry Masala

Fry Onion

Fry garlic ginger paste

Add pudina paste

Fry for 10 minutes

Add water and boil

Add soaked rice. Cook covered for 10 minutes. Pudina pulao ready.

Yields: 4 persons

Ingredients

  • Basmati rice - 1 cup
  • Ghee - 4 teaspoon
  • Oil - 1 tablespoon
  • Cloves - 5 , cinnamon-2 , cardamom -3, Bay leaf-2
  • Onion ( chopped ) - 1 medium sized
  • Pudina leaves - 1 cup
  • Coriander leaves - 1/2 cup
  • Green chillies - 3
  • Garlic giner paste- 1 tablespoon
  • Coconut - 1/4 cup

Method

  1. Make a paste of pudina , coriander leaves,green chillies and Coconut
  2. In a pan, heat oil and ghee
  3. Fry cloves, cinnamon , Cardamom and bayleaf
  4. Now add chopped onions, salt and fry.
  5. Add garlic ginger paste and fry well
  6. Cook covered for 10 minutes. Pudina pulao is ready
  7. Serve it with raita and papad.
  8. Variation : 1. Can add boiled potato pieces and green peas in the step before adding the rice to be cooked.
  9. Variation : 2. We can use already cooked rice and just add to the cooked pudina mixture.
  10. Variation : 3. We can use cooked millets instead of basmati rice
