TOMATO RICE

Tomato rice is a south Indian recipe, ideal for lunch box. It is very simple and different version of tomato rice.Let us see how to make spicy tomato rice.

Ingredients

  • Raw rice ( soaked in water ) - 2 cups
  • Tomato puree - 4 cups
  • Onions ( chopped) - 2 medium sized
  • Green chillies - 4 no's
  • Ginger garlic paste - 2 tsp
  • Oil and ghee - 2 tsp
  • Cloves, cinnamon, bay leaf, cardamom
  • Turmeric powder - 1/2 tsp
  • Coriander leaves for garnishing
  • Salt as required.

Method

  1. In a deep pan, heat 1 tsp of oil and 1 tsp of ghee,fry cloves , cinnamon, cardamom and bay leaf.
  2. Add onions and green chillies and fry.
  3. Now add salt and Turmeric powder and fry for a minute.
  4. Now add ginger garlic paste and fry till raw flavour goes.Fry till oil oozes out.
  5. Now add tomato puree, mix well and cook covered for 15 minutes in a low flame till oil oozes out.
  6. Then add rice and fry it for 3 minutes.
  7. Add hot water... Double the amount of rice that is around 4 cups of water..
  8. Cook covered in a low flame for 15 minutes..
  9. Garnish with coriander leaves.
  10. Spicy tomato rice is ready.Serve it with raita and papad.
  11. VARIATIONS : Spice levels can be adjusted according to our requirements.
