PARUPPU USILI

Paruppu Usili is a traditional Tamil Nadu dish. It is commonly prepared with vegetables like plantain flower, cluster beans, cabbage, french beans, broad beans etc. Its a very good side-dish for vathal Kuzhambu, Mor Kuzhambu, Milagu Kuzhambu. Let us learn how to make Paruppu Usili in four easy steps.

Soak equal quantities of  Toor dal, Channa dal along with red chillies for 1 hr

Add little water and grind coarsely along with Hing/asafoetida and salt.

Mix it with steam cooked vegetables like plantain flower, cluster beans, cabbage, french beans, broad beans, etc.

Season mustard seeds  and methi seeds in a heavy bottom pan (kadai) and saute the mixture. It’s done!

Ingredients

  • Plantain flower/ cluster beans,/ cabbage/ french beans/ broad beans - 2 cup chopped
  • Tur Toor Dal -1/2 cup
  • Bengal gram dal/kadalai paruppu/channa dal -1/2 cup
  • Red Chilli - 5 -6
  • Turmeric powder -1/4 teaspoon
  • Hing/asafoetida - 1/4 teaspoon
  • Mustard Seeds - 1/2 teaspoon
  • Methi Seeds - 1/4 teaspoon
  • Salt to taste

Method

  1. String the vegetable and chop it finely. Steam cook the vegetables. Keep it aside.
  2. Soak Toor dal, Channa dal along with red chillies for 1 hr
  3. Add little water and grind coarsely along with Hing/asafoetida and salt.
  4. Mix it with steam cooked vegetables.
  5. Season mustard seeds and methi seeds in a heavy bottom pan (kadai) and saute the mixture.
  6. Serve with Vathal Kuzhambu/Mor Kuzhambu/Milagu Kuzhambu rice.
