LEMON RASAM

This  South Indian Soup  is deliciously light soup, which helps digestion. In South India it is taken as a soup or even mixed with hot cooked rice and ghee.

Blend well the tomatoes, green chilli and ginger with one cup of water and set aside.

Pressure cook (3 whistles)  the Toor dal with 1 cup water until it is soft and tender. Mash well and set aside.

Boil the third cup of water in a heavy-bottomed sauce pan with salt and turmeric powder. When it boils add cooked dal and the blended puree. Allow it to slowly boil over simmered heat.

Place a small pan over moderate heat, add the ghee, mustard seeds and cumin seeds, when it splutters and changes colour, add curry leaves and pour it over the boiling soup. Turn off the heat.

Add the lemon juice and mix well.

Garnish with chopped coriander.

Ingredients

  • Tur Dal - 1/2 cup
  • Water - 3 cups
  • Chopped Tomato - 1 large
  • Chopped green chilli - 2
  • Ginger - 1/2 inch piece
  • Salt - 2 teaspoons
  • Turmeric Powder - 1/4 teaspoon
  • Ghee - 1 tablespoon
  • Mustard Seeds - 1/2 teaspoon
  • Cumin seeds - 1 teaspoon
  • Chopped fresh coriander - 1 tablespoon
  • lemon juice - 3 tablespoons

Method

  1. Blend well the tomatoes, green chilli and ginger with one cup of water and set aside.
  2. Pressure cook (3 whistles) the tur dal with 1 cup water until it is soft and tender. Mash well and set aside.
  3. Boil the thrid cup of water in a heavy-bottomed sauce pan with salt and turmeric powder. When it boils add cooked dal and the blended puree. Allow it to slowly boil over simmered heat.
  4. Meanwhile place a small pan over moderate heat, add the ghee, mustard seeds and cumin seeds, when it splutters and changes colour, pour it over the boiling soup. Turn off the heat.
  5. Garnish with chopped coriander, add the lemon juice and mix well. Serve hot.

Health Benefits :

  • Lemons increase peristalsis in the bowels, helping to create a bowel movement thus eliminating waste and helping with regularity.

      Pigeon pea / Tur Dal/ Toor Dal

      A yellow coloured lentil flat on one side, oblong in shape, used widely in Indian cooking. Pigeon pea is commonly known as arhar dal or split toor (tuvar) dal.
