CHOLAM DOSA

Crispy cholam dosa (jowar in Hindi, Sorgham in English) is children’s favourite. This iron and calcium rich millet dosa is very simple to make and healthy too.

Wash, drain and soak raw rice, cholam and urad dal separately for 3-4 hours.

Add urad dal in a Mixie and run. Next add cholam and run the mixer. Then add the rice and blend to a smooth paste.

Add salt and mix well. Leave the batter for 8 hours for fermentation.

Heat the tawa and spread the batter from the centre.

Add oil and cook both sides. Serve with coconut chutney or any other chutney.

Ingredients

  • Sorgham (white cholam) - 1 cup
  • Raw rice - 1 cup
  • Urad Dal - 3/4 cup
  • Salt - 1 teaspoon

  6. VARIATIONS : Raw rice can be replaced with idli rice as cholam gives the crispyness in dosas.
