INSTANT RAGHI OOTHAPPAM

Instant Raghi (finger millet) Oothappam is a quick, yummy and healthy tiffin. Suitable for elders and children.

Mix raghi, soji rava and curd and water to make oothappam batter.

Then add onion, capsicum, ginger, green chillies, cumin seeds and mustard seeds and mix well. Then add curry leaves.

Heat Tawa and make oothappam. Add oil and cook both sides.

Server hot with chutney.

Ingredients

  • Finger millet (ragi / nachni) flour - 3/4 cup
  • Semolina (suji) - 1/2 cup
  • Yogurt - 1 cup
  • Onion finely chopped - 1 medium
  • Green capsicum finely chopped - 1/2 medium
  • Ginger finely chopped - 1 inch
  • Green chillies finely chopped - 1 or 2
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Curry leaves 10-12
  • Salt to taste
  • Oil as required

Method

  1. Combine semolina and ¾ cup curd in a bowl and mix.
  2. Add finger millet flour, onion, capsicum, ginger, green chillies, cumin seeds and mustard seeds and mix well.
  3. Add remaining curd and mix. Add some water,mix well and set aside for 5 minutes.
  4. Heat a non-stick tawa.
  5. Add curry leaves and salt to prepared flour mixture and mix well.
  6. Put some oil on hot tawa and wipe with a tissue.
  7. Pour a ladleful of prepared flour mixture, spread into a shape of uttapam, add oil and roast till the underside turns light golden.
  8. Cook both sides.
  9. Serve hot with chutney and sambar.
