BHAGARA BAINGAN

Bhagara Baingan is a delicious dish made with small brinjals (augberines).It is a popular Indian cuisine brinjal curry of Hyderabad. It is also  called as Nune vankaya kure in Telugu. This dish is served with Biriyani or bhagara rice called as bhagara chawal. Let us see how to make this delicious bhagara baingan.

Dry fry cumin seeds.

Dry fry groundnut.

Dry feed coriander seeds.

Dry fry sesame seeds.

Dry roast grated coconut and leave all of them to cool.

Now in a pan, Heat 2 tsp of oil, add chopped onions, ginger piece, garlic cloves and red chillies  and fry  till the raw smell goes.

Add tomatoes and fry.

Coarsely grind all dry roast items.

Now add fried onion and tomatoes in the mixer and grind along with the dry masala powder.

Masala ready.

Now, wash and slit brinjal.

In a pan heat 2 tsp of oil and shallow fry the stuffed brinjals till it gets half cooked. Now add the tamarind extract, turmeric powder, and remaining masala which we made, to the fried brinjals and cook till the raw smell of tamarind goes.

Ingredients

  • Brinjal ( small-sized) - 300gms
  • Tamarind - small lemon sized ball.
  • Ground nuts - 2 tsp
  • Coriander seeds - 2 tsp
  • Cumin seeds - 1 1/2 tsp
  • Grated coconut -1/4 cup
  • Sesame seeds - 2 tsp
  • Onion - 1 cup chopped
  • Tomato - 1 cup chopped.
  • Garlic - 7- 10 cloves
  • Ginger - 1 inch piece.
  • Red chillies 5 no' s
  • Salt as required

Method

  1. In a pan, dry fry the groundnuts, cumin seeds and coriander seeds separately, till the raw smell goes.
  2. Now dry fry the white sesame seeds .
  3. Then dry fry the grated coconut till it becomes golden brown.
  4. In a blender ,add all the above fried items and grind it to a coarse powder.
  5. Now in a pan,Heat 2 tsp of oil, add chopped onions, ginger piece, garlic cloves and red chillies, fry till the raw smell goes.
  6. Now add chopped tomatoes and fry for 5 minutes.
  7. Allow it to cool, and blend it along with with a coarse nut powder .
  8. Wash brinjal and slit. Now stuff the brinjal with the grinded mixture.
  9. Now stuff the brinjal with the grinded mixture.
  10. In a pan heat 2 tsp of oil and shallow fry the stuffed brinjals till it gets half cooked.
  11. Now add the tamarind extract, turmeric powder, and remaining masala which we made, to the fried brinjals and cook till the raw smell of tamarind goes
  12. Garnish with finely chopped coriander leaves.
  13. .Serve bhagara baingan with hot Biriyani or rice.
