SWEET PONGAL

Sweet Pongal or  Sakkarai Pongal is a delicacy made from newly harvested rice.Its is cooked with moong dal, jaggery, ghee and cashewnuts and offered to Sun God. It is commonly made as naivedhyam offered to god in temples. Today let us learn to make this pongal following these step by step photos and method.

Dry roast rice till it is hot to touch.

Dry roast moong dal Separately till it is hot to touch. It need not change colour

Heat 1/4 cup water in a pan And add jaggery to it. When it dissolves, filter to remove impurities.

Pressure cook rice and dal together with 2 1/2 cups water. Mash well and keep aside.

Boil jaggery water with a teaspoon of ghee on medium heat. Take a cup of water, add a teaspoon of jaggery syrup to it. If it does not dissolve, then it is the right stage to add mashed rice and dal mixture.

Now, add rice and dal mixture to jaggery syrup.

Add rice and dal mixture and cook for few minutes until everything gets blended well . Add cashew nuts and raisins fried in a teaspoon of ghee. Add cardamom powder . Mix well.

Sweet Pongal ready to serve. Serve hot.

SWEET PONGAL

Ingredients

  • Raw Rice -1/2 cup
  • Moong dal /paasi paruppu-1/4 cup
  • Jaggery -1 cup grated
  • Cashew nuts- 2 tablespoons
  • Raisins- 2 to 3 tablespoons
  • Cardamom-4 pods or 1/4th teaspoon powder
  • Ghee-1/4 cup

Method

  1. Dry roast Rice and dal separately until it is hot to touch
  2. Pressure cook rice and dal together with 2 1/2 cups water. Mash well and keep aside (for new rice, add only 2 cups water)
  3. Heat 1/4 cup water in a pan and add jaggery to it . when it dissolves, filter it to remove impurities
  4. Boil jaggery water with one teaspoon of ghee on medium heat .Take a cup of water ,add a tsp of jaggery syrup to it. If it does not dissolve then it is the right stage to add mashed rice and dal
  5. Add mashed rice, dal mixture and cook for a few minutes until everything gets blended.Add cardamom powder at this stage .
  6. Fry cashew nuts in a teaspoon of ghee. Remove from pan and add to the rice dal mixture.
  7. Add the rest of the ghee and fry raisins until they puff up and add it to the rice dal mixture along with ghee
  8. Cook for a few minutes on low heat until everything gets blende well. serve hot.
