TRICOLOUR VEGGIES

Tricolour veggies is a colourful, quick and healthy side dish for rice or chapatti and can be eaten as salad too.

 

 

Ingredients

Heat oil in a pan and fry mustard seeds

Add urad dal , red chillies and curry leaves

Add carrot and beans and fry for 5 minutes n low flame

Add cabbage and cook covered fo 10 minutes on low flame

Ingredients

  • Cabbage - medium size 1/2- shred to small pieces
  • Carrots - 2 -shred to small pieces
  • Beans - 10-shred to small pieces
  • Mustard- 1/2 tsp
  • Urad dal split- 1 tsp
  • Red chillies - 4
  • Curry leaves - few
  • Salt to taste

Method

  1. Heat 1 tsp oil in a pan
  2. Add mustard and let it splutter
  3. Add urad split, red chillies and curry leaves and fry for a minute on low flame
  4. Add carrot and beans and fry for 5 minutes on low flame till they get cooked
  5. Add the cabbage, little salt and mix well.
  6. Cook covered on low flame for 10 minutes till all veggies are cooked
  7. Tricolour veggies ready. You can eat plain as salad or as side dish with rice.
