SWEET SEEDAI

Sweet Seedai is crispy and crunchy made with rice flour and jaggery. Its a traditional sweet made for Krishna Janmashtami. It tastes good with rice flour made at home as explained in the steps below.

Soak rice . Spread the wet rice on a cloth and dry

Add the dried rice to a blender and powder

Sieve the powdered rice flour so no lumps are found. Roast slightly in dry pan to remove moisture

Ingredients

Make Jaggery syrup

Filter the jaggery syrup and mix with rice flour

Add the sesame seeds and make a dough

Make small balls out of the dough

Deep fry the balls in oil

Sweet seedai is ready

 

SWEET SEEDAI

Prep Time: 1 hour
Cook Time: 40 minutes
Yields: 20 - 25 seedai's

Ingredients

  • Raw rice flour - 1 cup
  • Sesame seeds - 2 tsp
  • Jaggery - 3/4 cup
  • Urad dal powder - 1 tsp
  • Oil for deep frying
  • Butter - 2 tsp
  • Cardamom powder - 1/2 tsp

Method

  1. Soak raw rice for 1/2 an hour,drain the water completely. Now spread it in a white clean cloth,dry it in a shade.
  2. Let it dry completely without any moisture in it. In a mixer take the rice, grind it to a fine powder.
  3. Sieve the flour twice.Roast slightly in dry pan to remove moisture. This flour can be used to make thattai,murukku and uppu seedai too.
  4. In a pan, take jaggery add enough water approximately 1/3 cup,Keep it in a medium flame until we get a slightly thick jaggery syrup.
  5. Filter the jaggery syrup to remove impurities if any.
  6. In a mixing bowl, take rice flour, urad dal powder, melted butter, sesame seeds and cardamom powder and mix well.
  7. Now add jaggery syrup to the above mixture and mix well.If the syrup is not sufficient , just sprinkle little warm water and form a dough.
  8. Let the seedai's rest for 20 minutes for the extra moisture to be absorbed.
  9. Heat oil in a pan, add few balls and fry it in a low medium flame.Fry in batches
  10. Fry till it is deep brown in colour . only then it will get cooked inside properly.
  11. Drain on a tissue towel,let it cool down then store in an air-tight container.
  12. Crispy and crunchy sweet seedai's are ready.

VARIATIONS

Grated coconut (little fried) can be added while making dough.
Instead of butter, melted ghee can be added.
Instead of Urad dal powder, sooji rava can be added
Instead of jaggery, sugar can be added to the dough while mixing
