SWEET POTATO GOLDEN FRY WITH CURRY LEAVES

Sweet potato is one of the highly nutritious underground vegetable. This recipe is very simple and delicious dry side dish variety .It can also be served as a snack during the evening time. The sweet potato is offered as a naivedhyam during Shivaratri. Let us see how to make this delicious recipe.

Boil sweet potatoes

 

 

Seasoning with mustard, urad dal , curry leaves, hing and chillies

 

 

Fry for a minute

 

 

Add the boiled sweet potatoes and fry

 

 

Fry for 5 minutes

 

 

Transfer to the serving bowl

 

 

Sweet potato Golden Fry with curry leaves

Ingredients

  • Sweet potatoes - 5
  • Curry leaves
  • Green chillies - 2 no’s
  • Mustard – ½ tbsp
  • Oil - 2 tbsp
  • Urad dhall – 1 tbsp
  • Turmeric powder – ¼ tbsp
  • Asafoetida or Hing
  • Salt as required

Method

  1. Pressure cook the sweet potatoes , peel out the skin and cut it into small pieces and keep ready.
  2. Heat the pan, add oil, mustard, urad dal and fry till the dal becomes golden colour.
  3. Now add curry leaves, green chillies and hing, fry for a minute.
  4. Then, add the sweet potatoes , turmeric powder and salt and mix well.
  5. Fry for 5 minutes
  6. Add finely chopped coriander leaves and transfer to the serving bowl.
  7. Delicious Sweet Potato Golden Fry is ready.
