1 cup basmati rice
1 cup coconut milk, 1 cup water
1 sliced onion
3 green chillies slit
1 tsp garlic ginger paste
few curry leaves and mint leaves,
Method
Soak 1 cup basmati rice for 20 minutes
In a deep pan,heat 1 tbsp ghee
Add cashews..fry for a minute till they are golden..then add garam masala
Add chillies,curry leaves, mint leaves ..fry for a minute
Add onion, salt and fry till onion turns golden
Add garlic-ginger paste and fry for a minute
Drain the soaked rice and add..fry for 2 minutes
Add 1 cup coconut milk and 1 cup water..cook covered on low flame for 10 minutes..ghee rice ready
Additional Info
Ghee rice is a quick meal which does not need vegetables and takes less time.
You can have onion raitha or any kurma as side dish. Or eat it plain with papad
