Ingredients

  • Ghee-2 tablespoons
  • Broken cashews- 2 tablespoons
  • Rava- 1 cup
  • Grated coconut-1 cup
  • cardamom powder-1 teaspoon
  • Sugar- 1 cup
  • Maida -2 cups
  • Oil for deep frying

Method

  1. Heat 1 tbsp ghee in a pan..
  2. Fry 2 tbsp broken cashewnuts till golden
  3. Add 1 cup rava and fry till raw smell goes away
  4. Add 1 cup grated coconut and fry till golden brown
  5. Add 1tsp cardamom powder and mix
  6. Add 1 cup sugar and mix well....remove from flame so sugar does not melt...
  7. This mix will be used as the filling for the somaas
  8. Mix 1 tbsp ghee to 2 cups maida .
  9. Add little by little water and make like chapathi dough..
  10. Make small puris .Keep the above prepared filling in the centre..
  11. Fold puri and seal the ends with little water...
  12. Deep Fry in medium heat oil..

Somaas in tamil or Kajjikaayalu in telugu. Nevri, karanji, karjikai are the different names to this deep fried snack made during festivals mostly during Deepavali.. Its a light snack that is not too sweet. You can store this snack for more than 10 days without refrigeration.
