Thenkuzhal Murukku

Thenkuzhal Murukku is a crunchy Snack made of rice and urad flour. This deep fried snack is a must snack for Deepavali festival at every home in Tamilnadu. The festive mood starts when the murukku is made and stored in the containers.

Get ready with Murukku flour (Home made Murukku flour recipe will be posted shortly), white and black sesame, Asafoetida/hing soaked in water, melted butter and salt.

Mix all the ingredients.

Add water and make non-sticky dough.

Fill the mould with dough.

Grease flat ladle or reverse side of  small plates and make the spiral. Flat ladle is better as it is easy to drop in the oil.

Heat oil in a heavy bottom shallow Iron pan. Check the oil temperature by dropping a small piece of the spiral. If the spiral comes up slowly and steadily on top, the oil is hot enough to fry. If it comes up too quickly, the oil is too hot. If it stays at the bottom oil is not hot enough.

Turn the stove to medium flame and drop the spiral gently in the oil.

Fry both sides till the ‘Shhh’ sound ceases or until golden brown.

Drain in paper towel and cool down completely before storing them in an airtight containers.
